Nuremberg (Nürnberg) has suprisingly many all vegan cafés / restaurants. I only had a very quick walk around the city centre - straying not too far from the central railway station (Hbf).
Better check happy cow, because even as a pedestrian with a well-trained eye for vegan-spotting restaurants, you might otherwise walk past some of these unsuspicious looking restaurants.
Kaschemme
... As a historical side note:
Just a few houses up the street from Kaschemme, on the same side, at Vordere Sterngasse 1, there used to be - in 1929-1931 (and possibly the years surrounding these) - a vegetarian restaurant called Ceres. Ceres was a small restaurant "chain" at the time it seems. Around 1929-1931, Ceres had restaurants in Basel, Düsseldorf, Mannheim, Stuttgart, Munich, and Nuremberg.
The note I have says the owner or manager (?) was Richard Kirsten, and the address was "Vordere Sterngasse 1, l." The "l." probably stands for "left". So, it might have been right on the corner where you see the bike and the street signs ("10" [km/h speed limit] and "Give way" [watch out for pedestrians]). A newspaper report from 2017 states that there was already a Ceres restaurant in Stuttgart in "the 1920s".
My Hao
Address: Königstraße 2
"My hao" is Vietnamese for beautiful and good. (Thanks, Yen!)
"Kaspar Schmauser" is a play on words. "Schmausen" is German for "to dine". The word evokes comfort, ample food, enjoyment - so great choice for a restaurant. "Kaspar Hauser" is the name of a well-known historical person - and unsolved mytery case - in Nuremberg.

That's all I have for now.
